A number of well-known chefs will be showing off their skills at greenmarkets throughout Queens in coming weeks.
Hugue Dufour, the head chef at M. Wells in Long Island City, will be sharing his secrets at the Long Island City Youth Market, located at Center Boulevard and 46th Street, on Saturday. He will be cooking up recipes using the market’s seasonal produce and chatting about food from 10 a.m. to noon.
Dufour, who hails from Quebec, created M Wells with his wife, Queens native Sarah Obraitis, in 2010. They were awarded their first star from the Michelin Guide in 2015.
The following week, Saturday, Nov. 10, Bikash Kharel from the Nepalese restaurant While in Kathmandu will do a cooking demo at the Ridgewood Youth Market, which is located near the intersection of Cypress, Myrtle, and Putnam avenues, starting at 10 a.m.
Kharel’s family are heavily involved in Himalayan cooking. For instance, his father and brother operate Nepalese Indian Restaurant on Seneca Avenue — only a few blocks from his 758 Seneca Ave. eatery.
During the demo, Kharel will prepare Farsi Ko Tarkari, a pumpkin or butternut squash stew. With a recipe inspired by his mother, Kharel will mix garlic paste, ginger, heavy cream, jeera (cumin seeds), jeera dhaniya (ground cumin and coriander powder), sukeko khorsani (dry red chili), and tori (mustard seeds).
The final cooking demo in the series is scheduled for the Jackson Heights Greenmarket, located on 34th Avenue near 79th Street, on Sunday, Dec. 2, at 10 a.m.
Alfonso Zhicay, who owns Casa del Chef Bistro in Woodside, will do the honors. Like Dufour, he’ll work with what’s freshest.
